1 large salmon filet
1 cup Peace River Bourbon Hot Honey plus more for smoking
2 cups water
1/2 cup kosher salt
Your favourite BBQ rub
In a large bowl or resealable container, combine the water, Peace River Bourbon Hot Honey, and kosher salt.
Cut the salmon into 2-ounce pieces and place in the cure, making sure the salmon is covered completely. Cover and refrigerate overnight.
When ready to cook, set your smoker temperature to 180℉ and preheat with the lid closed for 15 minutes.
Place a cooling rack on a baking sheet. Place the salmon on the cooling rack and drizzle with more Peace River Bourbon Hot Honey and sprinkle with a generous amount of your favourite BBQ rub.
Transfer the sheet with the salmon onto the grill grates. Close the lid and smoke the salmon until fully cooked, 3 hours or so.
Baste the salmon with more Peace River Bourbon Hot Honey every 30 minutes.
Serve hot or chilled. Enjoy!
