Finely chop rosemary sprigs. Combine with hot honey and mustard.

Brush rack of lamb with honey mixture until evenly coated.

In a cast iron pan on medium heat, fry each side of the rack of lamb to get a nice crust. Approximately 1 minute on each side.

Transfer the lamb to an oven safe dish and place in preheated oven for 20 minutes or until cooked to an internal temperature of 145 degrees Fahrenheit.

Remove from oven and let rest for 5 minutes before carving into lamb pops.
